Five years experience as a Head chef with Swallow hotels
and Trust House Forte. 26 years as a Lecturer and Curriculum
leader at Kendal College. All of which have earned John
Draper both respect and recognition within the catering
industry. John has personally trained students to win
in all major competitions and has over a 100 medals and
certificates to his credit.
John commenced his training with a three-year full time
catering course at Bolton Technical College in 1963. After
a few insignificant part time jobs he had his "Baptism"
into the industry, under the famous French Chef Lucienne
Deschamps at the renowned Bridge Hotel in Prestbury Cheshire.
Working with a brigade of International top Chefs, John
learned the importance of discipline, hygiene, technical
skills and creativity.
Further training at the Hotel Zum Storchen in Zurich Switzerland
and the Restaurant Knussnacker in Bavaria, just outside
Munich; have given John a wide repertoire of International
Cuisine and their respective styles.
Since leaving education in February 2002 John started
his own business "Consultancy Training" but
has since joined JR's Restaurant on a permanent contract.
